Penne all'arrabbiata is a Roman pasta dish ("penne": it means "pens", indeed they are little pointed pipes of pasta). Arrabbiata sauce contains garlic, onions, pancetta, green olives, tomato sauce, and a lot of chili pepper, all cooked in olive oil, then used over the "penne" boiled in hot salted water. Penne will be served with grated Pecorino Romano cheese on the side and chopped parsley sprinkled on the top. All'arrabbiata means "angry style", due to the heat of the peppers.
